ICUMSA 600-1200 quality raw sugar is obtained after the initial crystallization process of sugar cane. Unlike white sugar, raw sugar maintains a rougher texture and displays a distinctive brownish tint. This sugar retains some of the natural molasses that was not entirely removed during the refining process, which contributes to its characteristic color and flavor.
When subjected to a complete refining process, raw brown cane sugar generates approximately 70% white sugar. The increased presence of molasses gives raw sugar a higher mineral content, adding richer, more complex flavor nuances. Molasses is responsible for the distinctive brown color as well as the slightly caramelized flavor associated with this type of sugar.
